Kombucha has been making waves as the latest go-to health beverage, which is made by fermenting sweetened tea with starter kombucha and Scoby, or symbiotic colony of bacteria and yeast.
Whole set kombucha brewing equipment includes steeping tank with filter (heating and agitator as option), hot liquor tank, heating exchanger, kombucha fermenter vessels with open top, finshing tank (brite tank), kombucha flavor blending tank, glycol cooling system and warm heating system etc.
The Tea Steeping Tank
The first step in the process is adding the tea. In essence, they needed a large teapot where the tea would first steep in hot liquor and then sweetened with sugar. We called this the tea steeping tank.
The steeping tank can be with heating or without heating, if without heating, and we use hot water from hot liquor tank, the hot liquor tank—not only for heating the liquor used for the production of Kombucha but also for cleaning the fermentation and finsihed tanks and flavor blending tank.
The Open-Top Kombucha Fermentation Tank
The open-top kombucha fermentation tank is designed for fermenting kombucha tea by allowing the tea to interact with the environment. This interaction is crucial for the development of the SCOBY and for the kombucha to achieve its characteristic flavor and effervescence.
The koumbucha fermentation tanks usulay with glycol cooling jacket, it allows for temperature control during fermentation. As these fermentation vessels were open-top, we also provided a removable lid that could be used for CIP purposes.
The Finishing Tank(Also Called Brite Tank)
The finishing tanks can be let the sediment falling down to the bottom and also can be carbonated lightly before packaging into their unique bottles and cans. This brite tank can also be used for a holding vessel before packaging their Kombucha into kegs.
Flavor Infusion Vessel
The flovor inusion vessel is used for adding the flavor into the tank, usualy the tank with agitaton mechanism.
But some customer use the hop cannon for adding purees to their fermented tea, recirculating the tea on herbs, spices, and other botanicals to get the desired flavor components into the finished product.
